Episode 2 of Fidelis Care’s “Live with Evette” series featured useful tips on cutting extra carbs and sugar, without sacrificing flavor or convenience.

 

NY Liberty legend and busy mom Kym Hampton joined Fidelis Care brand ambassador and lifestyle expert Evette Rios at Evette’s home in New York City. Together they made a delicious kale salad with homemade dressing, and shared some healthy food prep strategies.

Kym discussed how it’s been a challenge to change her diet, now that she is retired and no longer needs to eat for the athletic demands of women’s basketball. As a mom to daughter Ariel, she’s also looking for ways to limit family favorites like pasta and sugary drinks without sacrificing flavor.

Evette came to the rescue with these low-carb pasta alternatives:

Make spaghetti squash. Cut a spaghetti squash in half, scoop out all of the seeds, and rub each half with olive oil before placing face-down on a baking sheet. Cook in a 350-400 degree oven for about an hour. Evette likes to add gorgonzola cheese, capers and tomatoes to her spaghetti squash.

Spiralize it! Use a spiralizer to make pasta-like ribbons out of squash, carrots, or other veggies. Evette likes to toss her spiralized veggies with a little salt and pepper, and a sprinkle of parmesan cheese.

Buy a high-protein pasta. There are many pasta alternatives on the market that cut carbs in favor of protein. Pasta made with pea protein is one example.

Since Kym’s daughter loves sugary juice, Evette suggested these healthy but sweet strategies:

Get an infuser. Water infusers let kids experiment with different fruit flavors. The more you cut up the fruit, the more flavor you infuse into the water.

Try a home soda maker. These gadgets carbonate regular water. Then, you can add a little bit of juice to make your own soda! This helps you experiment with different flavors while limiting sugar intake.

Drink coconut water. It’s low in sugar, contains vitamins, and it’s becoming more affordable as its availability widens.
